Easy Cucumber Bites
Ingredients
- English cucumbers
- Boursin Cheese – 5.2 oz (or the Boursin you made from my recent recipe)
- Various toppings from your imagination!
Directions
- Wash cucumbers and wipe dry.
- Score the length of the cucumbers with the tines of a fork. Do not peel.
- Slice in approximately 3/4” slices.
- Put slices in colander, sprinkle with a small amount of salt and let drain for 20 min. Dry cucumbers again.
- Using a melon ball scoop or small teaspoon, remove center of cucumbers, being careful not to go all the way through.
- Fill the centers with Boursin using a pastry decorating tube or simply a very thin spoon like you would use for deviled eggs.
- Now use your imagination. Use thin slices of pimento olives, thin slices of salmon, capers, pickles, etc. End with a sprinkle of fresh parsley.
- Cover lightly with Saran and refrigerate until ready to serve.
