Orange Cranberry Bars

A sweet and tart bar with the consistency of brownies.

Orange Cranberry Bars

Ingredients

  • 2 eggs, room temperature
  • 1/2 cup salted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 1 teaspoon orange extract
  • Zest from 1 large orange
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh cranberries

Optional Ingredients

  • 1/2 cup lightly toasted sliced almonds
  • Powdered sugar for dusting

Directions

  1. Preheat oven to 350 and line a 9″x13” pan with parchment paper, extending the paper on both ends of pan, for easy removal of squares.
  2. Using a mixer, beat together the granulated sugar, butter and orange zest until it appears light and fluffy. Add eggs and orange extract and beat well. Be sure and scrape down the sides of the bowl as needed.
  3. Add dry ingredients and mix until just combined. Fold in cranberries.
  4. Spoon dough into prepared pan and press it down as well as you can to make sure it covers the pan completely. If you use your hands, be sure to grease them well due to the sticky consistency of the dough. It may not look perfect but will all come together during baking.
  5. Sprinkle with sliced almonds, if using.
  6. Bake 35-40 minutes. I baked mine 35 minutes in a gas oven. The edges and top will have some light browning. Do not overcook!
  7. Allow to cool completely. Removed using extended parchment and dust with powered sugar. Cut into bars and serve.
