Fresh Fruit Cobbler
Fruit Ingredients
- 3 cups fresh fruit (peaches, or any combination you like)
- ½ cup sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons flour
- 2 tablespoons cold butter
Topping Ingredients
- 1 cup flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- 1 tablespoon grated lemon rind
- 1/3 cup canola oil
- 3 tablespoons milk
- 1 egg
- 1/3 cup sliced almonds, lightly toasted
Directions
- Preheat oven to 350.
- In a well-greased 8” dish, arrange 3 cups of fresh fruit, set aside.
- Mix sugar, cinnamon, nutmeg, flour together in small bowl.
- Sprinkle on top of fruit.
- Dot with butter.
- For the topping, stir together flour, baking powder, salt, sugar and lemon rind.
- Add oil, milk, egg and almonds and stir until well mixed.
- Using a large spoon, carefully cover fruit with topping.
- Bake at 350 degrees for 25 – 30 minutes.
- Serve warm with ice cream or whipped cream.
