The perfect summertime dessert

Fresh Fruit Cobbler

Fruit Ingredients

  • 3 cups fresh fruit (peaches, or any combination you like)
  • ½ cup sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons flour
  • 2 tablespoons cold butter

Topping Ingredients

  • 1 cup flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 tablespoon grated lemon rind
  • 1/3 cup canola oil
  • 3 tablespoons milk
  • 1 egg
  • 1/3 cup sliced almonds, lightly toasted

Directions

  1. Preheat oven to 350.
  2. In a well-greased 8” dish, arrange 3 cups of fresh fruit, set aside.
  3. Mix sugar, cinnamon, nutmeg, flour together in small bowl.
  4. Sprinkle on top of fruit.
  5. Dot with butter.
  6. For the topping, stir together flour, baking powder, salt, sugar and lemon rind.
  7. Add oil, milk, egg and almonds and stir until well mixed.
  8. Using a large spoon, carefully cover fruit with topping.
  9. Bake at 350 degrees for 25 – 30 minutes.
  10. Serve warm with ice cream or whipped cream.
