Maple Pecan Refrigerator Cookies

Old fashioned goodness adapted from Yankee Magazine and Farmer’s Almanac.

Maple Pecan Refrigerator Cookies

Ingredients

  • 2 sticks (1/2 pound) unsalted butter, room temperature
  • ½ cup sugar
  • 3 tablespoons genuine maple syrup
  • 1 large egg yolk
  • ½ teaspoon vanilla
  • ½ teaspoon McCormicks vanilla butter & nut flavor (optional)
  • 2 cups flour
  • 1 cup chopped pecans

Directions

  1. With a mixer beat butter until creamy (about 3 minutes).
  2. Scrape down the sides of the bowl. Beat sugar in gradually.
  3. Add syrup, egg yolk and vanilla and butter/nut flavoring, if using.
  4. Blend in flour and pecans.
  5. Divide dough in half. Place one half on a sheet of waxed paper or plastic wrap. Shape into a log about 2” in diameter. Cover and refrigerate.
  6. Repeat with second half. Refrigerate until firm (or freeze for later).
  7. Heat oven to 350 degrees.
  8. Slice dough into ½” rounds.
  9. Bake on ungreased baking sheets until golden.


If dough is sticky when forming into a log, use a sprinkling of confectioners sugar instead of flour to ease in the shaping.
