Al Johnson’s Lingonberry Spice Cake
Ingredients
- 1½ cups flour
- 7 tablespoons butter
- 2 eggs
- 1 ¼ cups dark brown sugar
- 2 teaspoons cinnamon
- 1 ½ teaspoons ground cardamom
- 1 teaspoon ground ginger
- 1 teaspoon baking soda
- ½ cup buttermilk
- 1/3 cup lingonberries (seedless raspberry jam works well, too)
Directions
- Grease and flour a 6 cup loaf pan (or the ridged almond cake pan)
- Melt the butter and let it cool.
- Beat eggs and sugar until light yellow and very thick.
- Combine the dry ingredients and add alternately with buttermilk, butter and preserves.
- Pour into prepared pan. Bake on a low oven rack at 350 degrees for 50 to 60 min.
- Check by inserting a cake tester in the center of the cake; if it comes out clean, the cake is done.
- Cool completely in pan.
- Before serving, dust with sifted confectioners sugar.
