Al Johnson’s Lingonberry Spice Cake

Ingredients

  • 1½ cups flour
  • 7 tablespoons butter
  • 2 eggs
  • 1 ¼ cups dark brown sugar
  • 2 teaspoons cinnamon
  • 1 ½ teaspoons ground cardamom
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • ½ cup buttermilk
  • 1/3 cup lingonberries (seedless raspberry jam works well, too)

Directions

  1. Grease and flour a 6 cup loaf pan (or the ridged almond cake pan)
  2. Melt the butter and let it cool.
  3. Beat eggs and sugar until light yellow and very thick.
  4. Combine the dry ingredients and add alternately with buttermilk, butter and preserves.
  5. Pour into prepared pan. Bake on a low oven rack at 350 degrees for 50 to 60 min.
  6. Check by inserting a cake tester in the center of the cake; if it comes out clean, the cake is done.
  7. Cool completely in pan.
  8. Before serving, dust with sifted confectioners sugar.
